Med Pinostradamus får man Pinot Noir i sin reneste form. Her er det udelukkende den fine frugt, der er i fokus. Druerne er høstet med gammeldags håndkraft og vinen er efter gæret i ståltanke og lagret i amforaer af ler i 10 måneder.
En utrolig let, men samtidig kompleks rødvin med elegance i højsædet.

The 2022 Arbois Pupillin Pinot Noir Sous la Roche that I tasted unbottled last year has changed its name to 2022 Arbois Pupillin Pinot Noir Pinostradamus, but it comes from the Sous La Roche lieu-dit, like in previous years. It was vinified with 100% full clusters that gave it good grip and fine tannins. It has an expressive, open and exuberant nose, reflecting the very warm year, despite keeping a very low 11.5% alcohol (as listed on the label). It was produced and bottled without any additions, not even added sulfur, and has a natural profile, wild and characterful, with notes of wild berries, herbs and spices. It has red rather than black fruit and a juicy palate, rounder and with softer tannins than is the usual for this vineyard. It's very tasty, with moderate acidity. It drinks well and has turned out better than expected.
