Bruno Paillards Blanc de Noirs Grand Cru er skabt ud fra ønsket om at vise – gennem et blend af mange forskellige årgange – hvor storladent og lækkert Pinot Noir fra det nordlige Champagne kan udtrykke sig.
Vinen er udelukkende fremstillet af første pres fra nøje udvalgte Pinot Noir druer fra fire Grands Crus: Verzenay, Mailly, Verzy og Bouzy, hvorfra det bedste Pinor Noir i champagne kommer fra.
Bruno Paillards Blanc de Noirs Grand Cru vinificeres hovedsageligt i rustfrit stål, med en lille andel (15-20 %, afhængigt af året) lagret på ældre egetræsfade for at berige cuvéen med fylde og kompleksitet.
Herefter lagrer vinen tre år på gærresterne (sur lie). Efter degorgering, hvis dato er angivet på bagetiketten, hviler Blanc de Noirs Grand Cru i mindst seks måneder i kælderen. Som alle champagner fra Bruno Paillard er der tale om en tørhedsgrad i Extra-Brut kategorien med en dosage på blot 3 g/l.

Disgorged in November 2022 with three grams per liter dosage, Bruno Paillard’s NV Extra-Brut Blanc de Noirs Grand Cru is showing brilliantly, revealing a delicate, perfumed bouquet with aromas of red berries, spring flowers, pepper and grapefruit, followed by a moderately weighted, incisive palate that’s vinous and taut with an intense core of fruit. Saline and chalky, the finish is ethereal and lingering. Based on the 2018 vintage, with 12.5% reserve wines, it’s crafted from Pinot Noir grapes sourced from four villages (Verzenay, Mailly, Verzy and Bouzy) and was vinified in 20% oak barrels.
Vinous - 93
The NV (2019) Extra Brut Blanc de Noirs is captivating right out of the gate. Soft contours wrap around a core of kirsch, red cherry, mint, spice, dried flowers and light pastry notes. Pretty floral and mineral accents resonate on the sculpted finish. The fruit for this bottling comes from Verzenay, Verzy, Mailly and Bouzy, based on the 2019 vintage, with 12.5% reserve wines blended in.

This is a fresh and focused blanc de noirs with aromas of croissants, walnuts, peaches and white strawberries. Sleek and elegant on the palate, lightly nutty, with fine bubbles and a dry finish.
Decanter - 92
Despite the ripeness of the 2018 vintage, this is a neat blanc de noirs showing delicacy as well as insistency. Nectarine, orange peel and red pear present juicy, bright aromatics, with a little menthol and apple blossom detail. There is a contained roundness and crisp, citrussy energy on the palate, signalling this wine's tendency to side with subtlety over power. Two thirds Pinot Noir from the northern Montagne de Reims villages of Verzenay, Verzy and Mailly, with one third from Bouzy. Based on the 2018 vintage, with 12.5% reserve wines and approximately one fifth fermented in small oak barrels.
