Knastør og sprød champagne, når det er bedst.
Det kræver et exceptionelt druemateriale og stort håndværk, at skabe stor champagne helt uden tilsætning af dosage(sukkerlikør).
Hos Bruno Paillard laver man i dag udelukkende champagner i kategorien extra brut, der indikerer et minimum af dosage og med denne vin er man gået skridtet videre.
Der er således ikke tilsat dosage til vinen, og selvom den opleves ren og tør, så vælter det op af glasset med røde frugter, fine mandler, citronskal og brioche. Især det røde frugtudtryk træder tydeligt frem takket være den høje andel af røde druer i blendet, der består af 50 % Meunier, 25 % Pinot Noir, 25 % Chardonnay.
Druerne kommer fra over 30 forskellige byer i Champagne og den endelige vin består af 50% reservevine, hvoraf nogle har ligget på fad. Vinen har har ligget 3-4 år på flaske inden degorgeringen. Herefter har vinen lagret 6 måneder, førend Bruno Paillard har frigivet flaskerne fra deres kælder.
Decanter - 93
Zero dosage can be a rather austere style of Champagne, but this is made with a high proportion of Pinot Meunier, plus over 50% reserve wines - some fermented in barrel - giving more roundness and complexity. It has fresh and lifted aromatics, with green apple, vanilla and some nuttiness, partnering a soft but zesty and persistent effervescence. Brisk acidity wraps around a richer core with toasty notes, revealing citrus, crunchy apple, candied peel and marmalade hints as it opens up. There's a marked salinity on the long finish.
Vinous - 93
The NV Dosage Zéro is a very pretty and expressive wine. The no dosage style is not especially evident, as the wine's balance is simply impeccable. Dried pear, crushed flowers and spice all flesh out. The mousse is quite refined, and that only adds appeal. Bruno Paillard's Dosage Zéro is very much done in his style.
James Suckling - 93
Intense yeasty autolysis with crackers, sourdough and stones that lends itself well to the sliced apple characters. Bone-dry and austere on the palate with subtle, creamy perlage and concentrated flavors, and a rather mineral finish. 36 months aging on the lees.
Robert Parker - 91
There was no dosage for this cuvée disgorged in October 2021. The Bruno Paillard NV Dosage Zéro, elaborated with a majority of vins de réserve, expresses a vibrant and pure bouquet with aromas of almond, pear, peach, spring flowers, menthol and some toasty hints. Tense with racy acids, the palate is medium to full-bodied with a chalky, saline finish. It's a very fresh and pure Champagne.
