Fyldig og vinøs roséchampagne fra Bruno Paillard.
Her bader Bruno Paillard i den grad Pinot Noir-druen i spotlyset. Husets storladne rosé skabes nemlig primært på baggrund af Pinot Noir druen, med en mindre andel Chardonnay tilsat. Som altid med så grundigt et champagnehus som Bruno Paillard bruges kun most fra det første pres af druerne, hvor kvaliteten er allerhøjest.
Andelen af Pinot Noir i denne roséchampagne frembringes på to forskellige måder. Der laves først en "hvidvin" på Pinot Noir, hvor druerne hurtigt presses og skallerne fjernes med det samme, så mosten er meget lys og kan vinificeres som en almindelig hvidvin; mens en mindre andel af Pinot Noir druerne laves som en traditionel rødvin, hvor mosten får en længere maceration med skallerne, og trækker farve og en smule tannin med sig.
Også til denne vine benytter Bruno Paillard en andel af reservevine fra 25 forskellige årgange, der strækker sig helt tilbage til 1985, og som bidrager med en utrolig kompleksitet.
Rosé Premier Cuvee får herefter tre års lagring sur lie, efterfulgt af mindst yderligere seks måneder efter dégorgement.

Decanter - 96
There’s a touch of orange peel on the nose along with notes of tart red fruit. Despite the lightness and delicacy, there is concentration on the creamy palate, where lemon and strawberry play off each other. The finish reveals even richer citrus notes in this subtle wine.

Bruno Paillard considers the role that a touch of northern Côte des Blancs chardonnay play in his rosé to be like that of a classic ruby ring, surrounded by diamonds to bring light to the ruby. The aspiration of his rosé is to showcase the delicacy and fragility of pinot – more delicate than chardonnay, with thin skins, requiring a very precise harvest-timing decision, and the longest in the cellar before it opens up to be ready to taste.With a pretty pale-salmon hue, this is a rosé of real definition, alive with pomegranate, pink grapefruit and strawberry hull, fresh and fruity and yet exactingly focused, drawn out by excellent, vibrant acidity, fine chalk minerality and fine-ground tannin structure. It handles this tannin impeccably, without falling into astringency or bitterness, uniting comfortably with the salty umami character of the chalk on a long and bright finish. The creamy texture of three years lees age has unified everything harmoniously.

Disgorged in January 2022, Paillard’s NV Extra-Brut Première Cuvée Rosé exhibits aromas of peaches, wild strawberries, Griotte cherries and spices. Medium to full-bodied, bright and tensile, it’s concentrated and incisive. It concludes with a bright, long and penetrating finish.
Vinous - 92
The NV Extra Brut Rosé Première Cuvée is laced with hints of grapefruit, citrus peel, rose petal and dried flowers. Like all Paillard Champagnes, the Rosé Première Cuvée is very bright, but it also has enough mid-palate pliancy to balance things out. The creamy, resonant finish is quite attractive. James Suckling - 92
Grapefruit, freshly crushed strawberries, stones and subtle cream. The fine perlage cuts through the medium-bodied palate with solid red berry and citrus fruit.
