Vinene fra Chevillon er altid eftertragtede, for vi har med en af Bourgognes bedste og mest klassiske producenter at gøre. Til denne flotte Premier Cru høstes druerne fra familiens blot 1,2 ha. vinstokke i Les Cailles-marken. Med sine godt 80 år er vinstokkene de ældste hos Chevillon, og udbytterne er helt naturligt mikroskopiske. Som med alle husets vine afstilkes druerne helt og aldeles, inden vinen tilbringer 20 måneder på egetræsfade, heraf 30% nye. Vinen viser en klassisk næse med dragende noter af kirsebær, skovjordbær, røg og mørk chokolade. I munden er vinen medium fyldig og silkeblød i sit udtryk. Mørke frugter, orientalske krydderier og en underliggende mineralitet kendetegner vinens palette, som smyger sig elegant over tungen. En fænomenal vin fra Chevillon.
Jasper Morris - Inside Burgundy - 92-95
A beautiful mid purple colour with a very enhanced class to the fruit on the nose. This is very complete again with the more rigid structure, little waves of fruit keep pouring across the palate, almost daintily given the power.
Robert Parker - 92-94
Wafting from the glass with notes of cherries, smoky berries, licorice and rose petals, the 2023 Nuits-Saint-Georges 1er Cru Les Cailles is medium to full-bodied, fleshy and layered, with its usual suave, seamless profile and lively fruit flavors.
Allan Meadows - Burghound - 91-93
Moderate wood sets off ripe aromas of poached plum, crushed anise and pretty violet hints. There is a bit more volume to the delicious and lightly stony flavors that also are not particularly dense but the length is seriously impressive as is the balance. Moreover, this very classy effort should drink well a bit earlier than usual.
Vinous - 90-92
The 2023 Nuits Saint-Georges Les Cailles 1er Cru has an expressive, well-defined bouquet that gains clarity in the glass, with black cherries underscored by touches of espresso and allspice. The oak is neatly integrated and the palate is medium-bodied. This is a more austere Nuits Saint-Georges, with grainy tannins and gentle grip on the slightly abrupt finish. Fine.
