Der findes finere adresser og mere hypede områder end Savennieres. Det er Domaine Baumard imidlertid ligeglade med, for her stoler familien på, at kvaliteten i deres vine er nok til at bryde igennem og skabe opmærksomhed om deres vin. Og det er altså ikke uden grund, at de har troen på deres egne evner og deres egen vin.
Det er denne Clos de Papillon et rigtig flot eksempel på, for det er en økologisk hvidvin på ren Chenin Blanc, der viser sig med et flot syrligt bid og en ren mineralitet, der kommer fra druernes vækst på de skifer-prægede syd- og sydøstvendte marker.
Smagsmæssigt oplever du en vin, hvor der er trukket alt det ud af Chenin Blanc-druerne, som man kan. Det giver en koncentreret frugt og en høj syre, der gør vinen aldeles langtidsholdbar og samtidig fremragende til at ledsage menuer, der består af fjerkræ eller af alt godt fra havet.
Vinous - 92
The 2019 Savennières Clos du Papillon is a satisfying, full-bodied expression, like an umbrella that's fully open. It's a naked wine with no oak, allowing the purity of fruit and the site to exhibit their potential. Round and supple with an element of creamy texture on the mid-palate, it reveals a counterbalancing fine clasp of grip, like a climber with an assured handhold on a difficult rock wall. The mouth is coated in a fine texture that you can gently lick at on the long finish. A little bottle age allowed this to come around. It’s drinking delightfully now.
Decanter - 92
A highly ambrosial nose precedes a palate that is rounded and fresh, with pure, creamy, lemon-butter fruit. Aged for a few years before release, this is now a hugely appealing and harmonious wine, which initially feels loosely structured but finishes with a firm, mineral grip. Everything is in place in this highly approachable wine. Pristine, elegant and sure of itself. Unusually for the appellation, the wine is unoaked and sealed with a screwcap. Although the wine is ready to drink now, it could benefit from decanting to open it up.

The 2019 Savennieres Clos du Papillon exhales a shy and closed bouquet with aromas of lemon, spring flowers and ripe orchard fruits. Medium to full-bodied, rich and satiny, it has a delicate core of fruit with a phenolic, slightly bitter aftertaste. It can be drinking anytime over the next decade. Bottled with a screw-cap closure.
